“The spring is here and so is the beautiful produce! What a great time to load up on local fresh produce. I have a challenge for you. Next time that you are at the grocery store look at the origin of your produce. Fruit and vegetables. Try and choose the ones that come from the US. Why? The two top benefits of buying local (or USA made) produce are:
• They don’t have to be in transit as long as produce coming from another country and therefore be exposed to unknown conditions like hot temps, exposure to dirt and fumes; • They support our local farmers and help boost our economy.
Here’s what you need: • 10 plastic water bottles with caps • 10 glow sticks from the dollar store • A rubber ball (a small basketball works great)
Night Bowling
Fill the bottles with water. Put one glow stick in each bottle. Put the caps on the bottles. Then set the bottles up in a triangle shape like this:
Take turns trying to knock all the bottles down by rolling a ball at them, just like in real bowling. If you don’t have glow sticks, you can bowl in the daytime without them.

Finding local produce: So many smaller towns are offering boxes of fresh produce at a reduced rate (programs like FOOD- SHARE). Look for local farmers markets stands. Some grocery stores are featur- ing, “Local produce” areas in the produce section that features local farmers. There are also companies like Misfit Market that offer fresh produce that might be a little too large or small for the grocery store and are offered at lower prices. Do some research and find the best deals! Now let me tell you about a new leafy green that I have fallen in love with …. Arugula! Its spicey and peppery and packs a punch of flavor to any sandwich or salad.
Its loaded with vitamins and
minerals and therefore another healthy option to add to your greens. Try it!
Arugula Beet Salad
For the Dressing • 3 tablespoons extra-virgin olive oil • 1 1/2 tablespoons lemon juice • 1/2 teaspoon Dijon mustard • 1/4 teaspoon honey • Salt and pepper, to taste
For the Salad • 3 ounces baby arugula • 2 medium beets (roasted, peeled, and diced into bite-sized pieces)
• 1/4 cup crumbled feta cheese • 1/4 cup roughly chopped toasted walnuts
