New faces in Bonclarken’s Food Service

from our guests on our guest surveys with numerous comments on how much they have enjoyed the meals. Eric also had a wonderful ability to keep food costs at a consistent percentage of meal revenue. Knowing we could predict food costs each year always made our budgeting process more accurate and was a great help. Eric let us know in January that he planned to retire in mid-May. Normally,

f you have attended a retreat or conference here at Bonclarken, then you know that our Din-
ing Room experience is an important part of the event. We are so blessed to have a beautiful dining room with nice views of Highland Lake and com- fortable setting to enjoy a meal. But the most important factor is the food! This month I want to tell you about a changing of the guard in our Food Ser- vice staff. Eric Neal has served as our Direc-
tor of Food Service since 1998 and has been a part of our staff since 1995. Under Eric’s leadership, our Food Service operation earned high marks
losing our Director of Food Service only weeks before our incredibly busy sum- mer season began would cause us to shudder. But we were so blessed to have a person on staff who was the ideal person to step into the role. Marcesa Harper grew up only a few miles from Bonclarken and worked summers in our Dining Room and Nibble Nook while she was in high school in the early 2000s. After graduating from college, she attended culinary school and worked for notable local restaurants. We had a full-time position in our Dining Room open last fall, and we were so pleased when Marcesa applied for the job. She joined our staff in September. Her knowledge of food preparation, ordering, presentation, guest relations,
and her glowing personality made her an ideal candidate to be our next Direc- tor. We were thrilled when she agreed to take on the role. As Marcesa and our entire Food Service staff began making plans for this summer, COVID-19 brought our summer season to a halt. We were blessed to be able to host a few weeks of overnight camp, which allowed Marcesa to try out many new recipes and food options. Our campers and camp staff loved it all! Marcesa and her husband Mitch have two adorable children: Harwin, 5, and
Finley, 2. They are living on our grounds and have been a wonderful addition to the Bonclarken family. On your next visit, be sure to sign up for meals---I guarantee you will enjoy
the experience!?
