I love beans! And my favorite these days are Cannellini. They have a wonderful nutty taste and are sometimes called White Kidney beans.


They are super stars because they are fat free and a great source of fiber, iron, magnesium and folate. We had a canned bean - label reading contest in the teaching kitchen and Cannellinis won the prize for being the most nutritious.


Beans are usually categorized on the plate as a veggie but these can easily take the place of protein if going for some meatless meals. Funny Story – I started meatless meals at our house, and I heated up a pot of these beauties with diced tomatoes, green onions, garlic and some vegetable stock. Dinnertime rolled around and we all filled our bowls. I loved it the way it was, my daughter proceeded to put


parmesan cheese on hers and my husband kept looking in the refrigerator. When I asked him what he was looking for he said, “bacon bits!” It’s going to take him a little bit longer to get accustomed to meatless meals.


So, try them out and make them the star of your plate! Other ways to eat them; put in soups, use in salads, feature as a side dish and even make an Alfredo sauce out of them! YUM! AND, if you want throw in some bacon bits or pancetta!

Armor of God


When we choose not to pray, go to church and not read our Bible we are taking off our armor of God. We need the Armor to stay afloat! Take the helmet of salvation and the sword of the Spirit, which is the word of God.”


Chicken Crust Pizza Submitted by Patrick Malphrus


INGREDIENTS j


1 - 10 oz. can of chicken (check to make sure it is “0” carbs) j 1/4 cup Parmesan cheese (the kind you grate yourself) j 1 egg


j Pizza toppings of your choice


Drain the can of chicken well, then spread it out on a baking sheet and bake for 10 minutes at 350º to dry the chicken out.

Once cool, finely mince the chicken and combine with 1/4 cup of Parmesan cheese and 1 egg.


Spread into pizza shape and bake at 500º for about 5 minutes or until crisp. Add pizza toppings and bake another 5 +/- minutes at 500º.
