Snow Day Story

These light, soft cookies are always a favorite at my house during the winter months. Try this easy-to-bake, sweet treat with your family! (Make sure you have a parent’s help when baking.)
Ingredients: • 2 large egg whites, at room temperature • 2/3 cup sugar • 1 teaspoon vanilla extract • 1 cup of semisweet chocolate chips
Instructions: • Preheat oven to 350 degrees. Line a cookie sheet with foil, and then grease it with butter.
• Beat egg whites until foamy. (I recommend using a mixer on medium speed.)
• Gradually add sugar, continuing to beat the egg whites until they hold stiff peaks.
• Add vanilla and salt. Blend well. • Use a spatula to fold in pecans and chocolate chips by hand. • Place teaspoonfuls of dough onto the cookie sheet. • Place cookie sheet into the oven. Turn the oven off. • Let cookies sit in the oven overnight (about ten hours). Be sure to keep the oven door closed (you don’t want heat to escape too quickly).
• Remove cookies from oven the following morning. Let cool, then taste one of your soft treats! Store in an airtight container.
