Katey’s Korner
I love oui jars! They are a perfect size for an individual portion of food so it’s not a common dip dish that everyone is using. (Watch out for those double dippers!) I made individual JARcuteries! In the bottom I put ranch or hummus and then added all kinds of veggie sticks (cucs, peppers, carrots, celery) cheese sticks, pretzels and sometimes rolled up pepperoni. Everyone loved them. When summer fruits arrived at the grocery store, I used them for mel- on ball cups squeezed some lime juice over them (so good!) and added a sprig of mint. I also used them for berry cups – strawberry, raspberry, and blue- berry with a little cashew cream on top! (cashew cream is the bomb!) Other ideas would be chicken salad with grapes, tuna salad with pret- zel sticks, pimento cheese with bread sticks. The ideas are end- less just start eating some yogurt and save the jars! - nitely be using my jars again! Here’s a great recipe for a pump- kin whipped yogurt that is delicious and works well with the jars. I would top this with a small candy pumpkin!

Pumpkin spiced whipped cream yogurt /4 /2

ingredient)
Add ingredients: Add all ingredients except the canned pumpkin to hand mixer. Whip yogurt: Begin mixing on low for about 20 seconds, until the liq- uid cream begins to mix into the yogurt. Slowly increase power to the highest speed. After 2 minutes of whisking, pause and use a spatula to give the yogurt a quick mix – push down the sides of the bowl and make sure the very bottom is mixed in. Continue mixing for another 2-3 minutes, or until soft peaks form when the whisk is removed. The peaks will not be super stiff, but will still stand up. Add pumpkin: Add the canned pumpkin to the mixing bowl and fold in by hand until well mixed. Serve & store: Place the mixture into individual portion containers or a large bowl with a lid. Enjoy now or place in the fridge for 3-4 hours – the whipped Greek yogurt will thicken as it chills. Top with whipped cream if you wish! Store in a sealed container in the fridge for up to 5 days.
