Copycat Recipe from Olive Garden ZUPPA TOSCANA
When I think of fall, I think of cozy sweaters and hot bowls of soup with a side of crusty bread. One of my favorite soups is the copycat Zuppa Toscana Olive Garden soup. Tis soup is easy to prepare and is so comforting on a chilly fall day. If you have not had the oppor- tunity to try this soup yet, I highly recommend it. It is so simple, but so good!
Ingredients:
1 pound spicy Italian ground sausage or use mild for kid-friendly
½ pound of bacon cut into bite-size pieces
1 small to medium white onion, diced 3 cloves of garlic, minced 1 tsp salt
Instructions:
1. In large pot, brown the Italian sausage and break up into bite size pieces. Once the sausage is fully cooked, remove it from the pot with a slotted spoon and place the sausage in a large bowl

3. Place the reserved bacon fat back into the pot and sauté the diced onion until it starts to brown on the edges. Add the garlic and sauté for 30 seconds until just fragrant.
4. Once you just start to smell the garlic, add 1 teaspoon salt, broth and potatoes, and bring to a boil over high heat. Once the ingredients in the pot come to a boil, turn the heat down to medium-low and simmer until the potatoes are about half cooked, about 7 minutes.
5. Once the potatoes are about half cooked, add the chopped kale and cook for about 5 minutes vary depending upon how high or low you keep your heat. Periodically taste the potatoes for do- neness so they do not get over cooked. The potatoes will continue to cook a little in the hot broth
6. To the pot add the cream and the cooked sausage and bacon. 7. Taste for salt and season if necessary. Add a few cracks of fresh black pepper to taste.

4-5 Yukon Gold potatoes, cut into 1-inch pieces
4 cups chopped kale 2 cups heavy cream salt and pepper to taste
