CONTINENTAL REFRIGERATOR Pizza Preparation Tables
Many of the foodservice trends that became the focus of the industry during the pandemic – ghost kitchens, the popularity of quick-service restaurants – were already on the rise before COVID-19 became a household term. Te pandemic only accelerated consumers’ movement toward curbside order pickup and delivery. But the suddenness of that shift left restaurants scrambling to update their operations. Te limits of available kitchen space became even more pronounced as operators sought ways to quickly renovate or rearrange their preparation areas to accommodate the increase in carry-out business. Continental Refrigerator’s pizza preparation tables turned out to be the perfect solution to the space concerns of many operators. “Our variety of pizza prep models are recognized as offering versatile solutions along with having sought- after additional refrigerated storage capacity,” says Elizabeth Grant, marketing coordinator for Continental. Although it has “pizza” in the name, the preparation stations are designed with versatility in mind, often being used for sandwich and salad prep as well as making sushi. Te tables are available in five width sizes from 43 inches up to 118 inches and with various features, including a refrigerated compartment above the condensing unit’s housing. Adding to that versatility, Continental’s forced- air pizza tables have a rear-mounted evaporator coil with multiple fans that provide uniform air distribution across the
Grant notes that for optimum efficiency, the pizza prep tables should be located away from extreme heat sources. To provide some flexibility, the equipment can be ordered with the condensing unit on either the far left or right side at no additional cost. Some of the other options include various door/drawer combinations, field reversing door hinging, over shelves, garnish racks, composite cutting boards and vision panel lids.
Quality is critical to Continental. Before shipping, all
products are performance-run tested for a minimum of 12 hours, providing a highly-sophisticated temperature recording exclusive to each individual cabinet.
What Salespeople Need to Know
Because its pizza prep tables are made from stainless steel and use difficult-to-source components, Continental is facing many of the supply chain challenges affecting manufacturers across the industry. “We are working proactively and aggressively with our suppliers to minimize the impact,” Grant says. “Trough our lean manufacturing practices, we are finding ways to improve productivity and cost containment.” Te company is working to overcome those supply chain
issues by keeping stock on hand at its factory and in its warehouse. It’s also stepped up communication with dealers to keep them up to date on the situation. “With the supply chain situation being fluid, we are promptly reaching out by
